It’s pumpkin season! Of course pumpkin is great for baking and making soups, but it’s also wonderful in drinks like lattes, chai and smoothies. Take this simple Pumpkin Spice Smoothie recipe- a sweet, spiced mix of pumpkin, yogurt, banana, maple syrup and cinnamon. It makes a nice breakfast smoothie or quick fix snack.
Pumpkin Spice Smoothies Recipe
1/2 cup pure pumpkin puree (canned or homemade)
1/4 cup full fat or low-fat plain Greek yogurt
3/4 cup almond milk
1 medium ripe banana
2 tablespoons pure maple syrup
1/4 teaspoon ground cinnamon
Dash ground ginger
1/2 teaspoon pure vanilla
1 cup ice cubes
Add pumpkin, yogurt, almond milk, banana, maple syrup, cinnamon, ginger and vanilla to blender container. Cover and blend until smooth. Add ice; cover and blend until smooth. Pour into glasses. If desired, sprinkle with additional cinnamon.
Makes 2 servings (about 2 1/2 cups total)
Tip: I used unsweetened almond milk. If you use a sweetened milk, you may want to reduce the maple syrup.
